Ingredients: Tofu (I used the super firm cubed tofu from Nasoya), Vegetables, Seasoning (whatever you prefer, I used my standard spices). Lime (optional). Avocado (or already made guacamole) and Salsa (already purchased).
Directions: In a non-stick pan over medium-high heat, drizzle some Extra Virgin Olive Oil. Mix in your vegetables and add some seasoning. Throw in your tofu and cook until desired consistency is reached or stay within the time frame above. I added about 2 small pieces of squeezed lime to kick up the flavor, a dab of Adobo and covered it on low-heat. And wahla! :)
